Found a coffee shop that pulls every shot to order

I was in Portland last week at this tiny place called Never Coffee and the barista actually weighed every single dose on a scale before hitting the button. It took like 3 extra minutes per drink but my latte tasted way smoother than the chain places. Has anyone else noticed a difference when shops actually measure instead of just eye-balling it?

And the crazy thing is once you taste espresso made that way it's hard to go back. I've started avoiding places where I can see them just slamming the portafilter in without even looking at the grind. Makes you wonder how many "bad coffee" experiences are really just lazy baristas.

Noticed the same thing at a shop in Denver. They timed the extraction too. Felt pretentious at first but damn the espresso had actual sweetness and no bitterness.
