Oh man, this exact thing happened to me last week and I'm still shook. I was at this little coffee spot downtown (totally unassuming place, you know the kind) and the barista just casually asked if I wanted to try his pour over setup. He pulled out a scale, a gooseneck kettle with a temperature readout, and this fancy ceramic dripper that looked nothing like my plastic V60 at home. He walked me through his whole process and I realized I've been basically guessing at everything - water temp, pour speed, grind size, all of it. I went home and tried to replicate what he did and my coffee actually tasted... different? Better? It was like realizing you've been cooking with cold oil your whole life. Now I'm deep down this rabbit hole of watching YouTube tutorials and I already ordered a new kettle. My wallet is crying but my morning cup is really happy about it.

Hold up - your plastic V60 actually works fine. The ceramic one just holds heat better. That's the real secret.
