I finally had a perfect pourover morning after 3 months of frustration
Started my day with a Nicaraguan roast from a local shop in Portland. Measured 18g coffee to 300g water at 205 degrees. Hit my 3 minute bloom exactly right. The flavor notes of dark chocolate and cherry came through perfect for the first time ever. No bitterness or sourness at all. Usually I ditch half my cup but I drank every drop. Anybody else chase that one perfect cup for weeks before getting it right?

Three months of borderline sink pours here too.

Last Tuesday I ran the faucet for a solid 45 seconds before I got anything that wasn't cloudy. And even then it had that metallic aftertaste. I know exactly what you mean about borderline sink pours. Its gotten to the point where I keep a gallon jug of store bought water under the counter just for drinking. I've had days where I stand there watching the water run and thinking, is this even safe for pasta? My landlord just shrugs and says it's fine, but fine isn't really fine when you're holding a glass up to the light and it looks like dishwater.
