I think light roast vs dark roast arguments miss the real point of extraction
Everyone keeps fighting over which roast is better but I noticed most people just don't dial in their grind right for the bean they have. I pulled 12 shots last week with the same light roast and got wildly different results just by changing grind size by 3 clicks. Which matters more to you, the bean itself or how you prep it?

My buddy Mike spent 2 hours at my place last month trying to dial in a Colombian light roast on my old Gaggia. He kept getting sour shots until he finally went down 5 clicks on the grinder and pulled a 32 second shot with actual caramel sweetness. Said it was night and day from the first ones he choked down.
