I've been brewing pour over wrong for like 5 years
I was over at my buddy's apartment in Austin last weekend and he made me a cup of his pour over coffee. I took one sip and it was just way cleaner and brighter than mine always come out. He asked what temp I use for my water and I said I just wait for the kettle to boil and pour it right away. He looked at me like I had three heads and told me to let it sit for 30 seconds after boiling first. I tried it when I got home and my coffee tastes totally different now. Has anyone else had a dumb simple fix like this change their whole routine?

Ha! I've been using a meat thermometer for my water like some kind of coffee surgeon.

Wait, are you actually measuring the temp of your coffee water like it's a science experiment? Bro, it's just hot water. You pour it over grounds and wait. That's the whole process. I mean, if you're that into it, more power to you. But a meat thermometer feels a little over the top. Like, is the coffee really that different at 200 degrees versus 195? Probably not enough to notice while half asleep.
