Just realized that guy at the roastery was right about my brew temp
I was at a local roastery in Portland last month, and this older fella watched me pour my water over the grounds. He said, 'You're burning those beans at 210 degrees, try 200 instead.' I shrugged it off because I thought hotter water meant more flavor. Yesterday I finally tried his suggestion and my cup tasted way smoother, no bitter bite at all. Has anyone else had a random stranger change how you make coffee?

My buddy was the same way, swore by 210 for years until he tried dropping to 198 and suddenly his Ethiopian beans tasted like actual blueberries instead of ash. A cheap thermometer is worth the ten bucks just to dial that temp in.
