My friend in Austin said my pour-over was way too fast and tasted weak, so I started grinding finer and aiming for a 3:30 total brew time.

What's your target time for a single cup with a V60?

My buddy had the same issue with his V60. He was chasing that 3:30 time and ended up with bitter, muddy coffee. He went back to a coarser grind and just watched the drawdown. For a single cup, his sweet spot is usually between 2:45 and 3:15, but he says the taste matters more than the clock.

Honestly, I totally get where @the_thea's friend is coming from, but I've had the opposite happen. For my single cup V60, I stick right at that 3:30 target with a medium-fine grind. If I go faster, it always tastes sour and thin to me, no matter the bean. The timer is just a good guide to get me in the ballpark before I tweak for taste.

Huh, that's interesting! I used to think faster was ALWAYS better for avoiding bitterness, but @emmafisher's experience totally makes me rethink that for my own brews.
