Picked a manual espresso maker over an automatic machine for my kitchen in Denver
I went with the Flair Pro 2 because I wanted total control over pressure and temperature, and after 3 weeks of daily use I'm pulling shots that taste better than my local cafe but it takes way longer - has anyone else found the tradeoff worth it?

Nah, I'd rather just push a button and save that time. @karenm49 your 8 minutes could be two latte walks.

That's the thing nobody talks about. Those 3-5 minutes of dialing in per shot actually change your whole day. I started timing my routine. Pulling a shot on my Robot takes me 8 minutes from grinding to cleanup. My old Breville did it in 90 seconds. But here's the catch. That extra time keeps me from making 3 or 4 lazy shots a day. Now I pick one shot, make it count, and actually drink it. The machine forced me to slow down. Now I taste what I'm drinking instead of gulping coffee while checking email.

Now I taste what I'm drinking instead of gulping coffee while checking email" - that part hit me hard. I used to think people were overthinking it with manual machines. Just give me my caffeine fix. But I got a Flair last month and it's exactly what you're saying. I'm down to one real shot a day. The rest of the time I just brew a french press if I need more. No more mindless espresso refills while I'm working.
