Realized after 2 years I was storing my beans completely wrong

I kept my coffee beans in the freezer for the longest time cause I thought it kept them fresh. Last week a buddy at the local roastery saw me pull a bag out and asked why I was ruining perfectly good coffee. Turns out freezing beans actually dries them out and messes with the oils. I switched to an airtight ceramic container in the pantry and the difference in flavor was huge. The crema on my morning shots went from thin to thick in like 3 days. Anyone else make this mistake or got a storage trick that actually works?

Wait, you froze them for TWO whole years and they weren't just icicles by then?

I knew a guy in my neighborhood who froze a whole deer he shot for like 18 months in his chest freezer. When he finally thawed it out the meat was still fine, just a little freezer burned on the edges. This whole freezing thing has got me thinking about how people treat their food like it's indestructible or something. You see it with leftovers too, people shove stuff in the fridge and forget about it for weeks then get surprised when it smells weird. It's like we assume cold temperatures are some kind of magic that stops time completely.
