Saw a huge difference in my pour-over after switching water sources

I used to just use tap water from my apartment in Portland for my V60, but last month I tried filtered water from a Brita pitcher. The taste changed completely, cleaner and brighter, especially with Ethiopian beans. Anyone else notice how much water quality matters for extraction?

Cleaner and brighter" is a good way to describe it, but I gotta gently push back on the Brita thing. A regular Brita pitcher is mainly for taste and odor, it doesn't really take out all the minerals that mess with extraction. I mean, it helps a little, for sure. But if you really want to see the biggest difference, you gotta look at total dissolved solids or TDS. Portland water is pretty soft already so a Brita might just be polishing it, not changing the chemistry enough to explain that huge jump you saw. Try a ZeroWater filter or even just buying distilled water and adding your own minerals back in. That's when you'll really see the Ethiopian beans pop, like the florals and fruit just get turned up to eleven.

Cleaner and brighter" is exactly what I noticed when I switched to bottled spring water for my V60.
