Took me 3 hours to dial in a new Ethiopian bean from Onyx

Picked up a bag of their Southern Highlands last week and could not get a good cup no matter what I tried. Grind size, water temp, ratio - spent a full afternoon wasting coffee trying different combos. Finally figured out it needed a way finer grind than I expected and a 4 minute pour over instead of my usual 3. Anyone else find certain beans just fight you for way longer than they should?

Spent a solid hour yesterday convinced my scale was broken before realizing I just forgot to zero out my cup. Classic move. At least you figured yours out, I usually just give up and make cold brew instead.

Ngl @jade_lane19, cold brew is always the backup plan, but zeroing out is half the fun for me!
