Hot take: my uncle in Tulsa told me to stop using hot water in my cold brew and he was dead right
My uncle runs a small coffee stand in Tulsa and he told me this 4 months ago. I had been blooming my grounds with a splash of hot water before the long steep, thinking it pulled out more flavor. He said that heat starts pulling the bitter stuff right away and cold brew is supposed to stay cold the whole time. I ignored him for a while because my brew tasted fine to me. Then I ran two batches side by side, same beans, same 16 hour steep, one with the hot splash and one without. The cold only jar was smoother and I could actually taste the chocolate notes instead of just a flat bitter edge. So now I want to know if anyone else adds heat at any stage or if I was just fooling myself for a year.
