Walk-ins vs. appointments, which one keeps your chair full?

I overheard a stylist at the Ulta near 5th and Main say walk-ins are dead because everyone books online now, but my Saturday walk-in rate at the salon has been over 30% for 3 months straight. Meanwhile my coworker swears appointments cut no-shows down to almost zero. Which model actually works better for you all, and how do you handle the gaps when one side dries up?
