Found out espresso beans have a 'rest period' and it blew my mind

I was digging through a coffee forum last night and stumbled on this fact: freshly roasted beans need at least 3 to 5 days to degas before pulling a decent shot. I've been buying beans and using them the same day like an idiot for years. Turns out, my sour shots were because the CO2 was still trapped and messing with the extraction. I grabbed a bag from a local roaster in Austin, waited 4 days, and my cheap Breville machine made a shot that actually had crema. Has anyone else had this happen or am I the last person on earth to learn this?

Oh yeah, I aged my cheese for a month before eating it and regretted everything.
