My barista friend told me I'm ruining my shots with stale beans

Honestly, I didn't think a week old bag of beans from the grocery store would matter. But my friend Jen who works at a coffee shop in Austin told me that after 5 days off roast, the oils start going flat. She said I'm basically just brewing brown water at that point. I looked it up and she's right, the CO2 loss is huge after day 4. Has anyone else found a cheap way to keep beans fresh longer without buying a fancy vacuum canister?

Sucks learning your "fresh" beans are actually stale, right?

Oh yeah @juliaa25, I once bought "fresh" beans that turned out to be from last year's harvest.

That "fresh" thing is such a joke sometimes. My grandma used to swear by snapping the ends off green beans to test if they were fresh - if they snap clean they're good, if they just bend they're old. I tried it at the store once and this old guy laughed at me, said I looked like I was auditioning for a cooking show. But seriously, I've started sniffing my beans before buying now, sounds crazy but if they smell like grass clippings they're fresh, if they smell like nothing they've been sitting around forever. Learned that trick from a farmer at the farmers market who told me most store beans are at least a week old anyway.
