My sewing teacher was dead wrong about bias tape...

Mrs. Patterson swore I had to cut my own bias strips by hand for every curved seam, said the store-bought stuff would ruin my lines... I spent 6 hours on one dress fighting with wrinkled homemade binding. Finally bought a pack of premade bias tape for $4 and the curves on my next project laid perfectly flat, no puckers at all. Has anyone else had a so-called 'rule' from a teacher or tutorial that just turned out to be gatekeeping junk?

Wait, did Mrs. Patterson actually teach you how to cut and join bias strips correctly, or did she just hand you scissors and a ruler? Because I had a teacher who insisted on hand basting all zippers before machine stitching, but she never showed us the right way to hold the fabric so we weren't fighting it the whole time. That rule turned into hours of frustration until a friend casually mentioned a different method. What was the actual technique she wanted you to use for the homemade tape?
