My cousin's kombucha workshop in Austin made me ditch the scoby hotel method

He showed me how a fresh starter from a single bottle of raw kombucha works just as well and ferments faster, in about 5 days. Now I just keep a clean jar of strong starter tea in the fridge instead of a whole jar of pellicles. Anyone else skip the scoby hotel after a certain point?

Scoby hotels are just clutter for no real gain.

Totally ditched my scoby hotel years ago for the same reason. It just took up so much fridge space and felt messy. A jar of strong starter works perfectly and my batches are way more consistent now. Glad to see more people moving away from the old method.
