Hot take: Forgetting to stir during cooling made my coffee taste flat
I roasted a batch of Sumatra beans and thought I could just let them sit in the colander. Didn't stir them at all while they cooled down. The beans on top cooled fast but the ones underneath steamed and lost all their bright notes. Now I mix them around every minute until they're room temp.

Stirring is crucial, otherwise you lose those top notes fast.

Actually, I skip stirring all the time and never notice a difference. Those top notes might not be as fragile as people think.

Watch someone swirl their cup like they're judging a wine contest, then tell me those top notes don't matter. Wade_hall, you're probably drinking it so fast the only note you get is 'hot'. The rest of us are trying to actually taste the thing before it's gone.
