Air fryer chicken wings came out perfect on my third try last night

I've been trying to get crispy air fryer wings for weeks and they always came out rubbery. Last night I finally nailed it by patting them dry with paper towels and tossing them in a little baking powder. I cooked them at 380°F for 25 minutes, shaking the basket halfway through. They came out golden and crunchy, way better than the oven. Even my husband said they were better than takeout. Anyone have a go-to sauce recipe that keeps them crispy?

And here I thought the secret was just eating them fast enough that you don't notice they're rubbery... good to know there's an actual method. That baking powder trick is dangerous though, I used too much once and my wings looked like they were dusted with cocaine. Might have to try the 380°F instead of my usual 400°F that just burns the outside. What sauce did your husband say was better than takeout, or did you just rawdog them with salt and pepper?

Lmao "cocaine wings" is the best accidental recipe name I've heard all week.
