Frozen chicken wings beat fresh ones in my air fryer, heres why

I always thought fresh wings would be better but after trying both last week the frozen ones came out way crispier with less drying out. The frozen ones just needed a few extra minutes and they were juicier inside. Anyone else notice frozen food sometimes works better in the air fryer?

It's the ice crystals on frozen wings that do it. When they thaw in the air fryer that extra moisture steams the inside while the outside gets dry heat. Fresh wings have less moisture trapped from the start so they tend to dry out faster on the outside before the inside is fully cooked. Frozen vegetables like broccoli do the same thing in my air fryer, they come out way better than fresh. The freezing process kind of pre-tenderizes stuff in a way.

Wait, the ice crystals actually help steam the inside while crisping the outside? That makes so much sense now, I never thought of it that way.
