Noticed a huge change in my chicken wings after adding cornstarch

I've been making chicken wings in my air fryer for about two months now, trying different methods each time. Last week I finally tried tossing them in a mix of cornstarch and baking powder before cooking, and the difference was crazy. Before, they were decent but kind of flabby on the outside, not crispy at all. After adding the cornstarch coat and letting them sit in the fridge for 15 minutes, they came out super crunchy and golden brown. I used about a tablespoon of cornstarch for 10 wings, cooked at 380 for 20 minutes flipping halfway. Now I'm wondering if anyone else has tried this or if there's a better ratio to use for extra crunch?

The 380 for 20 minutes is solid but I found 400 for 18 minutes gives an even better crunch without drying them out. @schmidt.amy, have you noticed a big difference using garlic powder with the cornstarch vs without? I am curious if it changes how the coating crisps up at all.
