Rant: preheating the air fryer vs just throwing food in cold, and why I'm mad at myself
I spent about 8 months just tossing frozen wings straight into a cold basket because a guy in a YouTube comment section said preheating was a scam invented to sell more appliances. Then two weeks ago I actually ran a test in my kitchen here in Boise, same bag of wings, same 400 degrees, 22 minutes. The cold-start batch came out pale and rubbery in the middle with soggy skin, and the preheated batch had actual crispy edges and cooked through evenly. I weighed them after and the cold batch lost almost nothing in water, which tells you the heat never really got to the skin the way it should. Now I preheat for 3 minutes, and honestly it added maybe 90 seconds to my total cook time and the wings taste like they came out of a real fryer. The part that bugs me is I fed those sad cold-start wings to my brother in law and he was too polite to say anything. So yeah, preheat the thing. Has anyone else tested this side by side, or am I the only one who fell for that comment?
