TIL the hard way about frozen fries versus fresh cut potatoes.
I made a batch of frozen crinkle cuts and a batch of potatoes I cut myself, both at 400 degrees for 15 minutes. The fresh ones came out way crispier and tasted better, no contest. What's your go-to method for getting homemade fries right in the air fryer?

Yeah, the frozen ones are basically pre-cooked and just need to be heated through, so they never get that real crisp. I read that soaking the fresh cut ones in cold water for like 30 minutes pulls out the starch, then you gotta dry them super well. Toss them in a tiny bit of oil and cornstarch, that's the trick. Mine still sometimes come out a bit soggy if I crowd the basket, so I do small batches now.

You soak them for a full half hour? That seems like an awfully long time, I've always just done a quick ten minute rinse. Does it really make that much of a difference? I might have to try your method, though drying them completely sounds like a real chore. The cornstarch tip is a good one, I usually just use oil.
