Brisket ruined my Sunday, then I went back to foil
I was at a cookoff in Austin last month and tried the naked wrap method on a 14 pound brisket, figured I'd trust the hype. Around hour 9 the stall wouldn't break and the bark turned into this hard shell that cracked when I probed it. Has anyone else had better luck with butcher paper in a windy spot, or am I just cursed with bad weather luck?

That hard shell cracking when you probed it sounds like my last attempt at a relationship, brittle and disappointing. I tried butcher paper in a breezy spot once and my bark turned out great, but the wind also blew my hat into the pit, so maybe it's a tradeoff. Honestly, I think half of brisket is just making peace with whatever chaos the weather throws at you.
