Debate: Overnight cooks vs waking up at 3am to fire the smoker

Had a talk with my uncle Pete at a cookout in Kansas City last weekend. He swears by starting his brisket at 10pm and letting it ride all night low and slow. Says the meat relaxes better with that long even heat. I told him I prefer getting up at 3am to light the coals fresh and manage the temp through the morning. He laughed and said I was just afraid of my smoker running unattended. Who here thinks overnight cooks are the way to go? Or is morning start the only real Pitmaster move?

All night is the way to go. Meat doesn't know what time it is, and that steady low heat makes for way better bark than any rushed morning fire can give you.

How are you keeping your fire stable through the night without waking up to adjust it every few hours?
