Got food poisoning from a brisket cook-off in Fort Worth last month and I'm still leery of potlucks
Three weeks ago I ate a sample at a small comp in Fort Worth and ended up on the bathroom floor for two days. About 40 people were set up and I watched one guy pull a brisket off the pit at 175 internal and slice it right into a foil pan sitting in the shade. I never got the name of his team and he was gone by the time I felt human again, so I can't even tell him. I'm not saying don't do these events, but I am saying watch how long the meat sits out before you grab a bite. How many of you actually carry a thermometer when you're just eating at one of these things?
