Had a chat with an old pitmaster at a gas station in Lockhart

I was grabbing brisket from Smitty's last month and ran into this older guy fueling up his truck. He saw my Blackstone bumper sticker and just said 'you're ruining good meat with that thing, son.' We talked for 10 minutes about how he's been running an offset for 40 years. I gotta ask, has anyone else gotten schooled by an old timer at a random spot like that?

Got a similar lecture from a retired welder at a Buc-ee's once about my grill grates. Turned out his advice on seasoning them with straight lard instead of oil actually worked way better.

And there I was thinking my Blackstone made me a pitmaster. Got told by a 70 year old at Walmart that my grill marks were 'just burn scars on a sad steak.' Told him I was trying to sear it hot and fast. He laughed and said I was just torching the outside while the middle stayed cold. Gave me his number and told me to call him if I ever wanted to learn how to actually cook meat. Haven't called yet. Too scared he'll see my setup.
