Heads up if you're planning a cook for a crowd this weekend
Last week in Dallas, I nearly ran out of brisket for a 40-person party because my new smoker's temp gauge was reading 50 degrees too low, so double-check your equipment with a second probe before you commit.

Always keep a backup probe in your toolbox.

Yeah but what if your backup probe is also broken? Seen it happen when the whole kit gets tossed around. Maybe we need a backup for the backup.

The real world isn't a Russian nesting doll. At some point you accept the risk and just fix the first broken probe. Carrying three of everything makes your kit too heavy to be useful.
