Heard a competition guy say he never wraps his ribs and I had to try it
I was at a local BBQ class last month and this pitmaster from a KCBS team said wrapping makes ribs mushy. I tried his method on my last cook - just straight 5 hours at 275 with a good rub. They came out way better than my usual foil wrap. Anyone else ditch the wrap and never look back?

Man, the foil is a crutch. I stopped wrapping bout six months ago and my bark game is night and day. That bite through is way more satisfying, you get that little snap instead of a wet mess. And I dunno, maybe I'm just lazy but skipping that extra step saves me time to drink another beer. Five hours at 275 is my sweet spot too, no arguing with that.
