I used to think wrapping brisket was a waste of time
For years I just let my briskets ride in my offset smoker in Austin, Texas. Then I tried the Texas Crutch method with butcher paper during a cook last fall, and the meat was way more tender. It kept more moisture in during the long cook. Anyone else switch from no-wrap to wrapping and see a big difference?

Is it really that much better? I never wrap mine and it still turns out fine. Seems like extra work for maybe a little more juice.

Honestly, the wrap keeps it from drying out on the edges (happens every time I skip it). It's just a foil tent, takes two seconds.

But @reese_perry6, what KIND of meat are you talking about? A big pork shoulder acts way different than a lean turkey breast. The foil tent trick is a lifesaver for some cuts but maybe overkill for others.
