I watched a guy in Memphis try to rush a brisket in 8 hours last week. It was a crime against barbecue.

That "worn-out boot" description from @umab35 is perfect. I felt that pain just reading it. Rushing a brisket just murders the fat and connective tissue every single time. You end up with expensive, chewy jerky instead of dinner.

My buddy Carl in Austin tried to smoke a whole packer brisket in six hours once. He cranked his pellet grill up to 350 and wrapped it in foil after two. The thing came out looking like a worn-out boot. We tried to slice it and the flat just shredded into dry, tough strings. He had to order pizza for his own cookout.

Oh man, "shredded into dry tough strings" just gave me a FLASHBACK. Honestly I'm SHOCKED he waited six hours. I would have given up after three and just ordered something. You KNOW that moment when you take the foil off and see that sad, crusty surface... it's like watching a car crash in slow motion. And having to call for pizza for your own cookout? That's a special kind of humility right there. I bet he still hears about it at every BBQ gathering.
