Met an old pitmaster in Lockhart who showed me his rub trick
He grabbed my hand and dumped a heap of black pepper right in my palm. Said you need to feel the grind between your fingers, not just eyeball it. Anyone else trust their hands more than a measuring spoon?

That texture trick sounds legit, but honestly I just trust my hands because I drop measuring spoons in the brisket juice every time.

That black pepper trick is a GAME CHANGER. Texture tells you way more about the grind than your eyes ever will.
