My pork shoulder stalled at 165 for almost five hours yesterday

I was using my offset smoker for a family cookout, and the temp just would not budge past that point no matter what I tried. Wrapped it in butcher paper after three hours, added more charcoal, even moved it closer to the firebox, but it still took until almost midnight to hit 203. Has anyone else had a stall last that long, and what finally got it moving?

Man, five hours is rough. Did you check your grate temp with a separate thermometer, or just go by the smoker's built-in one?

Wait until midnight? I would have lost my mind and ordered pizza. That's the longest stall I've ever heard of, honestly. Makes me wonder if your smoker was running way cooler than you thought the whole time.

Pizza was definitely calling my name by hour three. That smoker was basically a fancy outdoor fridge.
