Pro tip: Saw a pitmaster in Austin wrap his brisket in butcher paper with a cup of coffee in the mix

I was at a spot called Leroy and Lewis last month and watched them add about a half cup of cold brew to the paper before wrapping. It didn't make the meat taste like coffee, but the bark stayed way crispier. Anyone else tried adding liquid to their wrap?

What's so wild about it though? It's just coffee made a different way. Are you saying you've never seen it before or that you think it's a weird trend? Seems pretty normal to me.

Nah, cold brew isn't that wild. It's just coffee brewed with cold water over a long time. It's been a standard thing at coffee shops for years now. I see people grabbing it all the time, especially in summer. It's less bitter than regular iced coffee, that's the main draw.
