Reevaluating my stance on pellet grills after a backyard cook-off disaster
I always dismissed pellet grills as not real barbecue, thinking they took the skill out of smoking. But last summer, a friend's perfectly smoked ribs on a pellet grill made me question that bias. I mean, I struggled with my offset smoker that day, dealing with temperature swings while his cook was consistent. Watching how he managed the smoke profile with different pellets showed me it's more about control than cheating. Maybe it's just me, but realizing that consistency can enhance flavor, not dilute it, was a game changer. Now I see pellet grills as a valid tool for pitmasters focused on results, not just tradition.
