Serious question, why do pitmasters act like eco-friendly BBQ is a crime?

I started composting all my wood ash and meat trimmings last season. Old-school guys in my circle say that stuff doesnt matter if the heat isnt perfect. But my garden THRIVES now, and I feel better about my cookouts. Maybe we should stop ignoring the mess we make and think ahead MORE.

Meat trimmings in the compost... that's a new one.

Yeah meat trimmings sounds wild, but I tried eggshells once and the smell was unreal. It attracted every raccoon in the neighborhood for weeks. I stick to leaves and grass clippings now.

My uncle has been smoking brisket for forty years and never composted a thing. His BBQ is still better than any eco friendly cook I've met. The garden might be happy, but I doubt the compost pile does much for the flavor in the smoker.
