Spent 3 weekends chasing a temperature swing I could have fixed in an hour

I use a Weber Smokey Mountain for most of my cooks, and for months I couldn't get it to hold steady past 250. Every time I'd open the lid to spritz, the temp would spike 40 degrees and take forever to settle back down. Turns out the gasket on the door was shot and letting in way too much air. Replaced it with a $12 roll of high-temp gasket tape from my local Ace Hardware, and now it purrs like a dream. Anybody else spent way too long on a simple fix?

Not sure I'd call it a head slap moment though. Learning what to look for takes time and mistakes, that's just how experience works. You gotta run down the wrong path a few times before you know where the real problem is hiding.

Saw a guy on a BBQ forum once describe chasing a phantom leak for six months on his offset. He replaced every gasket twice, sealed the firebox, the whole works. Turned out it was one loose screw on the lid hinge letting air slip through. Read a lot of those stories now before I start poking at my own cooker. Your gasket tape fix is the same kind of head slap moment everyone seems to have eventually.
