The time my neighbor's pool party ruined my brisket, but taught me a lesson
Last July in Phoenix, I had a 14 pound brisket going for my neighbor's pool party. I walked away to help my kid find his goggles, and someone turned my smoker down to 180 thinking it was too hot outside. Three hours later I came back to a stall that wouldn't break, so I cranked it to 300 and wrapped it in foil out of panic. It came out tender but the bark was mush, and everyone still ate it because they were drunk. Now I put a padlock on my smoker lid whenever I'm not standing right there, has anyone else had a guest mess with their temps?
