I saw a champion pitmaster layer his coals in a specific way, so I tried it and my brisket cooked evenly without hot spots for the first time.

The champion pitmaster's layering trick you mentioned really works. I heard a guy on a barbecue podcast talk about the same thing. He said stacking coals with more on one side and less on the other keeps the heat steady. It helps the smoke flow better around the meat too. I always had one side of my grill way hotter before trying this. Now my chicken cooks the same all over without burning. That stack method is just smart fire management.
