TIL my old offset firebox method was killing my bark
For 8 years I ran a cheap offset with thin metal and I'd stack wood up high to keep temps steady. Last spring I switched to a 250 gallon reverse flow that a guy in Lockhart built, and I started laying logs flat and feeding smaller more often. The bark on my briskets went from dark and patchy to a uniform deep crust, and the smoke flavor got cleaner. Anybody else find that changing firebox style forced them to relearn their whole fire management?
