Why does nobody talk about the struggle of getting a clean smoke ring on a brisket in a ceramic cooker?

I fought with my Kamado Joe for 6 hours last Saturday, trying every trick from different wood chunks to adjusting the vent a hair, before I finally got that perfect pink ring just under the bark.

Used to think it was all about the wood. Then I realized the ceramic holds moisture so different. My big breakthrough was putting a water pan way closer to the firebox than I thought I needed. That extra steam in there early made the ring just pop.

Oh man that's brilliant! I spent way too long treating my ceramic smoker like a metal one and wondering why my bark was always meh. Then I tried the water pan right up front like you said and it was like a whole new world. I even burned my arm on the firebox grate rearranging stuff that first time because I got too excited about the steam. Totally worth the singed arm hair though!
