Wrote off pellet smokers as lazy backyard toys until a guy named Duane in Waco cooked me a brisket on one
The bark and smoke ring were better than what my offset turns out most Saturdays, and now I'm wondering if I wasted $800 on charcoal and splits. Any stick burners out there secretly running pellets when nobody's watching?
Ran an offset for years and swore by it, but the truth is those long cooks eat your whole day and half the time the fire runs hot or dies on you. Duane probably just knows his pit, but the pellet rig takes the babysitting out of it and lets you focus on the meat instead of the fire. Stick burners hate to hear it, but the gap in flavor is way smaller than folks want to admit, and most taste testers can't tell the difference anyway. You paid $800 to learn to tend a fire, that's not wasted, it's just that pellets do the boring part for you now. Keep the offset for when you actually want to sit outside all day, but don't feel bad about firing up the pellet on a Tuesday.
