My prize carrot turned into a five legged mutant monster

I pulled this carrot from my raised bed last Saturday and it looks like it tried to grow hands. It split into five separate legs at the bottom, two of them wrapped around each other like it was hugging itself. I almost threw it in the compost but my wife said to cook it anyway. Roasted it with some olive oil and salt, and honestly it tasted better than any perfect carrot I've ever grown. Has anyone else had a veggie that looked like a horror movie prop but turned out delicious?

Man I've had carrots do some weird stuff too, that sounds like a real winner. My soil here is so rocky I get carrots that look like they're trying to crawl away, all twisted and split. The ugly ones always have way more flavor though, like all that stress forces them to concentrate the sugar.
