Regretted skipping the vapor barrier on my shed build last summer
Tried to save like $40 thinking it was overkill, but now every morning I see condensation dripping from the roof panels. Has anyone patched in a vapor barrier after the fact without gutting the whole thing?

My buddy tried that on his chicken coop, used that spray-on foam stuff and it just trapped moisture worse and rotted his plywood. I'd say you're kind of stuck unless you take the roof off.
