Heard a crazy stat about food truck permits at a city hall meeting

I was at a Los Angeles city hall meeting about small business zoning (you know, trying to get the lowdown for my own spot) and the clerk said the average food truck permit wait time is 87 days. That's almost three months just to get started. Anyone here actually dealt with that wait and have tips for speeding it up?

Seen this everywhere lately. Everything needs a permit, a license, a stamp. Want to fix a porch? Permit. Sell lemonade? Probably a license. It's like they want to stop anyone from just doing a simple thing. Makes you wonder who all this paperwork is really for.

Look at it from the city's side. Those 87 days are for health checks, fire safety, and making sure your truck isn't going to block traffic somewhere. It stops a bunch of trucks from all setting up in one spot and causing problems. The process is slow, but it's there to keep things safe and fair for everyone.
