I finally figured out why my new food truck's fryer was acting up
The pilot light kept going out on our first day at the Silver Lake farmers market last Saturday. Turns out the regulator I bought was set for natural gas, not propane like my truck uses. Anyone know a good mobile kitchen repair person in LA?

Yeah that's a super common mix up with regulators. Just a heads up though, @coleman.jade, swapping it yourself is fine but you gotta be careful with the gas line connections. If you don't get them perfectly tight you can have a leak, which is a whole other problem. For a food truck where it's getting bounced around on the road, I'd probably get a pro to check it after.

Actually that regulator swap is a pretty basic fix, you could probably do it yourself with a YouTube video. Most mobile repair guys will charge a fortune just to drive out there.

My old camper stove had the exact same issue last year. I watched a five minute video and swapped the regulator myself for about twenty bucks. It really is one of those things that sounds harder than it is.
