That day our food truck ran out of propane in the middle of a huge lunch rush
It was a Tuesday at the downtown LA arts district, and we had a line of about 30 people. The grill just died halfway through cooking 15 orders. My partner had to sprint two blocks to the hardware store while I tried to calm everyone down with free chips. Has anyone else had a kitchen disaster that almost shut you down?

Propane tanks should ALWAYS have a backup.

Running out of propane is a hassle but calling it a kitchen disaster seems over the top. It's a basic supply issue that every mobile vendor plans for. You just solve it and move on.

Yeah... it's like people forget that the small stuff is what actually runs the world. A missing tank or a blown fuse can stop the whole show.
